Chickpea Potato Curry

Hello, everyone!  It's been a while. :)

I've recently gotten into the habit of soaking and cooking my own beans - it's not as troublesome as I'd previously thought, and so much more delicious.  I often cook and store a huge batch of chickpeas, so this Chickpea Potato Curry quickly made its way into my rotation of favorites.  You can pretty much throw everything into the pot and leave it to cook until it's done!

I've made it with an extra diced bell pepper - yum.  Oh yeah, I usually tone down the spiciness for the kids - still really good.  Fresh produce is usually used/added when available, but the recipe is delicious as-is.
