Inspired by the Chard Fritters that Sylvia brought for Thanksgiving as an appetizer, I offer you my version. Very easy to make and delicious. I'm sure my grandchildren will love it!
1 1/2 cups of all purpose flour
1 teaspoon baking powder
1 egg lightly beaten
1 teaspoon salt and pepper to taste
1 tsp of Cumin
2 tsp chopped cilantro
1 tsp of garlic powder
1 cup of milk
1 bunch of uncooked Swiss Chard (ribs removed and leaves chopped fine)
Dipping sauce
Yoghurt
Mango chutney
Lime
Combine flour, baking powder, salt and pepper, cumin, garlic powder and mix well. Add the egg and continue to mix well with a fork. Now add the milk slowly and incorporate it well. Finally incorporate the chopped chard and mix well.
In a frying pan, put some vegetable oil (not for deep frying but generous) and when hot, start adding the mixture with a teaspoon. Fry until golden and turn. When both sides are golden, place on a paper towel to dry.
Mix the yoghurt with the mango chutney and some lime.
Dip fritters in sauce and enjoy. The can be eaten hot or cold.
