Super yummy, super easy. We grilled Italian sausages, sliced zucchini, and whole red and yellow peppers. Then we added the zucchini to a bunch of things that I found in the pantry and and fridge (white beans, black olives, red onion, tomatoes, parsley and balsamic vinegar). We stuck the peppers in a bag and let them cool and then we peeled them. Then threw on some garlic, fresh mint, olive oil and salt and pepper...and viola, dinner. Yummy!

dinner last night

ReplyDeleteSounds great. I didn't know about the peppers in a bag trick. And I like the use of mint here. Sometimes I buy mint to make ice tea or something specific and a big chunk goes to waste. I don't usually think to throw it in many dishes. Thanks for the inspiration! xo
