I got this recipe from my friend Kathy's blog - I made it with some lamb chops on the bbq and my chickpea, carmelized onion, feta and mint salad (for which I will provide a recipe on another post). This salad was an amazing combo of flavors and textures. Yummy!
Radish and currant salad
Adapted from an Australian Gourmet Traveller recipe
1 bunch radishes, thinly sliced
1/2 bunch flat leaf parsley, coarsely chopped
2 tablespoons of currants, soaked in boiled water for 10 minutes and drained
1 lemon juiced
1 tablespoon olive oil
Combine all the the ingredients, season to taste and eat!
That sounds like a very tasty and fresh summer side salad. Question - do you use dried currants and soak them? I'm not sure where to find currants that aren't dried...
