
This is a really simple recipe and great for snacks for little monkeys. If you are making them for grown ups I would definitely add some salt - this recipe doesn't have any.
As you can imagine, you could really substitute any veg and cheese....
225g self raising flour
100g courgette- grated
100g cheese- grated
1 egg
175ml milk
55 ml olive oil
Mix the flour, courgette and cheese.
Whisk together the milk, egg and oil, and combine with the dry ingredients.
Spoon into 12 muffin cases and cook at gas mark 6 (200 degrees c) for 20 mins until golden brown.

If your recipe calls for self-rising flour and you only have all-purpose, here's how you can adapt:
Difficulty: Easy
Time Required: 1 minute
Here's How:
- Using a dry measure, measure the desired amount of flour into a separate container.
- For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.
- Mix to combine.
Tips:
- You can use self-rising flour in yeast bread recipes, but you'll need to omit the salt.
- If you use self-rising flour as a substitute for all-purpose flour in a quick bread, omit salt and baking powder.

I made these tonight and they were delicious! I made mini muffins and I can't wait for Max to try them! I think I'll bring some for my mom friends to try. Next time I will add even more vegetables. Maybe some grated carrot.
ReplyDeleteJust made the muffins. I'm not too fond of zucchini but I can see this is a good concept:-) so I'm going to experiment with asparagus, maybe cauliflower, also maybe corn?
