Nothing better than to invite friends or prepare this for the family the night before you serve it! Makes life simple and delicious.
Ingredients
8 whole eggs
12 English Muffins
12 slices of boiled ham cut thick so that can stand up in the serving dish
3 cups of whole milk
1 tbsp. of Dijon mustard
A splash or Tabasco or any other hot sauce
2 cups of grated sharp Cheddar cheese
1 cup of Parmesan cheese
1 tsp salt and pepper to taste
Maple syrup for serving
Preparation
In a large bowl, break the eggs and break them up with a fork. Add the milk and stir. Add the mustard and hot sauce as well as the salt and pepper.
Toast the English muffins so that they are crunchy but watch that they don't burn. Separate the two slices and then cut again in half so that you have half moons of muffin. Cut the ham to fit the muffins and layer them standing up in the serving dish first the muffin then the ham until you fill the casserole . Add all the cheese on top of the muffins and ham. You can use other cheeses including mozzarella, gruyere or anything melty. I just used the cheddar which acts as the "binder" for the whole concoction and the parmesan which adds more yummy crunch on top.
Pour the egg mixture on top of the whole thing making sure that all muffins are moist. Put plastic cover and put in fridge for at least 2 hours and preferably over night.
Cook in a 350 degree oven for an hour. Warm some maple syrup and serve. Enjoy, I know you will!
