Peanut Butter Chocolate Chunk Cookies
(Gluten Free, but don't hold that against them)
I made these cookies from a recipe I found here. Below is the recipe as I did it (I would reccommend checking out the link as well as it has very detailed instructions):
Ingredients:
1 cup creamy peanut butter
1 cup light brown sugar, packed
1 large egg
1 tablespoon vanilla extract
1 teaspoon baking soda
6 ounces semi-sweet, dark, or bittersweet chocolate, chopped (1 cup semi-sweet chocolate chips may be substituted) - I used a mix of dark, milk and white chocolate
Directions:
I mixed the peanut butter, brown sugar, egg and vanilla in a large mixing bowl by hand. Then I added the baking soda, then the chocolate.
I didn't chill the dough, although it might be a good idea.
I made cherry sized balls out of the dough and spaced them generously on a lined cookie sheet. Push them gently down with a fork and bake for 8-10 minutes.
The girls loved them!
Enjoy.
Just made them. Delish! I baked for 10 minutes and they are still very soft, but I think they are getting harder as they cool. Max is going to go crazy for them.
