Delicious Brussel Sprouts

Brussel Sprouts are sprouting in every menu! Inspired by the delicious ones we had at Walter's in Brooklyn, I decided to treat myself to some for dinner as soon as I got back to Miami.  This is entirely created without a recipe and it's delicious. I made it for myself so I really don't have precise measurements for you but you'll figure it out.

Cut the Brussels Sprouts lengthwise and put in a bowl.

Then add small new potatoes quartered so that they cook quickly.

Cut a few slices of bacon into pieces (not too small to prevent burning) and add to the bowl.

Optional: You can add other veggies that you have around like carrots, zucchini or asparagus always cut smallish so that everything cooks together.

Add Olive Oil to bowl (around a quarter cup...depending on the amount of veggies you're cooking) and salt and pepper to taste.

Lay all the veggies in one layer in a shallow pan or cookie sheet.

Bake for 30 minutes at 400 degrees.  At 15 minutes toss the veggies so that they don't burn.

When ready, remove from oven and drizzle maple syrup and a balsamic glaze over the veggies.  Instead of the balsamic glaze and maple syrup you can also use Thai sweetened chili sauce.

Like our friend Julia used to say "Bon Apetit!"
