Chocolate Ganache Brownie Cups .... No Dinner

Kids are away for the weekend so not really focused on dinner tonight .... we did eat a wedge of Cambazola, Rosemary bread and roasted peaches .... later.

What I was focused on today were brownies. Vivi called me yesterday to ask me to make something for a Relay for Life breast cancer event her squadron is participating in. So I thought brownies, brownies topped with pink hearts, in cello bags tied with pink ribbons.

You can make any recipe for brownies, they are all pretty much alike, it's what you put on top that really matters I think. If you want to cheat without anyone knowing .... use a mix, follow the directions for "cake like brownies", use clarified butter instead of oil, and very strong brewed coffee instead of water, finally throw in a handful of dark chocolate chips and follow baking directions. For these I used paper liners in standard muffin cups, filled 2/3 and baked around 15 minutes.

Now for the ganache, heat 1 cup heavy cream until just simmering (can do in the microwave), add 1 1/2 cup dark chocolate chips and whisk until you have a bowl of molten chocolate heaven! Let this cool a bit and then pour over the brownies, pop in the fridge to set. Sometimes I add a sprinkle of Maldon sea salt (thank you Natalia!), sometimes I put a spoonful of Dulce de Leche on top of the brownies before adding the ganache (which gives me the thought Marisa, that maybe we should call this blog "Dulce de Leche on a Spoon : What we're having for dinner, a food obsessed family's adventures in kitchens around the globe." A bit long I suppose!

Well, still trying to upload a photo ... no luck .... you will just have to imagine how cute they are .

  8. Ok, so I bought 2 boxes of brownie mix today - I saw them at the supermarket and couldn't resist! The tips about using clarified butter, coffee and chocolate chips are too exciting not to try! Now I need some kind of occasion to make them for otherwise Jason and I will eat them all!
