Vongole

This is my favorite thing to eat at home. Anytime I see clams for sale, I buy them and make this deliciousness. Unfortunately, this is not my photo. I made a GIANT pot the other night and then got so excited that we devoured it and then I realized I had forgotten to take a photo!

It is super easy:

You need:

Clams (I used about 1.5 kilos last night) You probably don't need that many - I got overly excited when I went to the fishmonger and he had clams that I bought them all
One packet of spaghetti (or linguine)
Lots of garlic
Lots of chopped flat leaf parsley
A couple of Lemons
Dry White Wine (not expensive, but one that you would drink)
Some dry chili flakes - or fresh chillis if you have them
Some chopped fresh tomato (I don't usually ad this, but I saw Jamie Oliver using tomato, and it was a nice addition)
Olive oil

Boil a big pot of salted water for the pasta. Throw in the pasta and then get to work on the clams.

You need a big pan, or a wok is great for this. Throw in some olive oil and then the garlic - don't let the garlic burn - then throw in the clams and the white wine and cover until the clams open (just a few minutes). Once they open, throw in the tomatoes, parsley, lemon zest, and chili flakes - mix it all together and voila!

Oh, and although I know that the Italians wouldn't approve - I always grate some Parmesan cheese over mine.

  3. Marisa - it's a good idea to make this dish on the night of garbage collection so you can get rid of all the shells!

  4. We made your dish tonight! I bought regular sized clams and also threw in some scallops. The tomatoes were a great addition. Served with an arugula salad with carrot and fennel. And yes, forget what they say, definitely put parmesean on top! Everything was delicious!!
