Oh my goodness, I am so excited about this blog - Marisa, you are a genius!
Ok, so last night I had the challenge of making something with ground pork for the second night in a row. There was a special at Marks and Spencers - 2 for 1 on some kind of outdoor reared blah, blah, ground pork and I got sucked in.
The first night I make a spicy pork version of a spaghetti Bolognese - which I must say was pretty good - I used some chilis that I had in the fridge and added it to an otherwise traditional recipe (onions, carrots, celery, passata and ground pork instead of beef) although I realized 3/4 of the way through cooking that I didn't have any Parmesan! So sad. Still yummy though.
Then last night I was presented with another packet of ground pork, and to my dismay, not much else in the fridge. I found two shallots, a couple of carrots, some ginger and some scallions and basically put all of that together with my ground pork. Added some Thai Fish Sauce and some Tonkatsu sauce and served it over some rice with some chopped fresh scallions on top. It was quite delish. Also found a lone avocado so I sliced that up, and squeezed some lemon on it, then added a splash of soy sauce and we ate it as a side dish. The avocado was particularly delicious. Am going to buy some more avocados today as I'm craving again!

Reading this made me so nostalgic for our roommate days! Cooking with you in our tiny kitchen and making it up as we went along. I can picture you fishing through all your random sauces and throwing it all in, and then just as everything is finished, you come up with a perfect little avocado side dish. I miss you chich! And it all sounds delish!
