A Little Comfort Food

When it starts getting hot, I walk Coco at around 6.30PM. I come home and I drive all the way here thinking..."what shall I have for dinner." Tonight I was about to order a small pizza and a salad cause I didn't much feel like cooking but I remembered Victoria's wise words "eat those veggies in the fridge before I have to throw them away. Ok Ok, I thought, I'll use whatever I have and make some spaghetti, which always been and will ever be my "comfort food." So here's the recipe and here's what I found in the fridge:

2 baby eggplants (so cute and little I had them as decoration for a week on my counter!)
2 tomatoes
3 cloves of garlic (I like them sliced)
a few uncooked shrimp (always have a bag in the freezer...for me and of course for Bebeto who adores them)
a handful of mushrooms
Spaghettini (thin spaghetti)
a pinch of Chili powder
Parmesan of course

Put salted water to boil for the spaghetti and drop in the tomatoes so that you can peel and then chop them.

Saute garlic in olive oil, add the veggies and condiments and then when they've cooked a little bit add the shrimps until they're red.
Parmesan to taste on top.

Mangia mangia! I had it with a nice glass of Malbec of which I am becoming very fond of and tell myself...a glass of red wine a day is a good thing. I hope that doesn't change.

  1. I have to start keeping shrimp in the freezer. I learned that from you, but haven't done it for a while. And I'm sure my kitties would love them, too.
