Tarte aux Pommes

This is one of my favourite!
Now, I don't make the crust. So I will only concentrate on the filling and the preparation.

Ingredients:
Well, 6 Apples ( I find Macintosh to be the best for baking)
1 Cinnamon stick
1 and 1/2 cup of brown Sugar
1 egg yolk ( to glaze the apples)
3 tall glasses of water ( I know, this is not accurate but roughly, enough to submerge the apples)

Apple Sauce:
Peel, cut in chunks and boil 2 and 1/2 apples in sugar, water and with the cinnamon stick.

Boil it, boil it, until the water has almost completely evaporated and the apples are soft and imbued with the sugar. Meanwhile, peel, thinly slice the rest of the apples, and Turn on the oven.

Take out the cinnamon stick and mash up the apples, to make a sauce.

Unroll your crust ( I really prefer the puff crust) Put the sauce at the base. Then place the apple slices. Cover every spots.

Then brush up the egg yolk on the apples so that they get golden once in the oven.
Put in the oven for 40 minutes at a low temperature I would 120 degree Celcius.

  1. I have enjoyed this many times. You can invite Natacha over for dinner with one hours notice and she'll show up with her tarte aux pommes. It is a great idea to have a signature dessert that you can whip up at the drop of hat. Must think of my own...
